Grilled Figs Stuffed with Aged Goat Cheese

As they age, some natural-rind goat cheeses begin to melt from the outside in, and positively burst with complexity and flavor. Ask your cheese monger for a natural-rind goat cheese that becomes more pungent and soft as it ages, and you'll find the perfect cheese for this easy recipe.

INGREDIENTS | SERVES 6

  • 12 large, ripe figs
  • 8 ounces of natural-rind aged goat cheeses
  1. Wash the figs and slice in half, lengthwise.

  2. Cut the goat cheese into pieces about ½ inch in size and put one piece on each halved fig.

  3. Set on the outside of the grill and cook until the cheese puddles and the figs have warmed. Serve immediately.
