Feta on the Barbecue

Like Haloumi, feta blocks hold their shape on the grill. This is so quick and easy you will hardly believe the results.

INGREDIENTS | SERVES 6 to 8

  • 8- to 10- ounce block of Greek feta
  • Extra-virgin olive oil
  1. Slice feta into ½-inch slices and brush with olive oil.

  2. Set on edges of grill, away from direct heat. Grill until the cheese begins to soften (just a few minutes) and serve.

Fetas Are Different

Fetas are generally made from sheep's or goat's milk, or a combination of the two, in many different places and countries. Each country seems to have a style of its own in terms of making this cheese. Next time you're at a cheese counter, ask to taste their fetas. You'll be surprised at the difference in creaminess, sharpness, and complexity of different samples.
