Chipotle Chicken Quesadilla
This easy recipe is a great way to use leftover chicken. But if you need to cook some chicken for this recipe, use boneless, skinless chicken breasts sliced into small pieces, and quickly fried over medium heat in a sauté pan or heavy skillet.
INGREDIENTS | SERVES 2
- 2 large flour tortillas
- ½ cup chipotle Cheddar cheese, grated
- ½ cup cooked chicken, chopped
- 2 teaspoons fresh jalapeños, finely chopped
- ¼ cup fresh tomatoes, finely chopped
- Sour cream
- Fresh cilantro sprigs
- Sliced lime
On a griddle or the flat of a large skillet, heat tortillas until they are piping hot.
Add ¼ cup chipotle Cheddar cheese, ¼ cup cooked chicken, and 1 teaspoon chopped jalapeños to one half of each tortilla.
Fold tortilla in half, over the cheese, chicken, and jalapeños, and then cook on griddle or in skillet until the cheese is melted and the tortilla is slightly browned.
Top with chopped tomatoes, sour cream, cilantro, and a squeeze of lime. Serve immediately.
