Olive Focaccia with Grilled Cheese

Grill this open-face sandwich under the broiler for an afternoon snack.

INGREDIENTS | SERVES 2 to 4

  • 4 slices Olive Focaccia
  • ½ cup Asiago, Monterey jack, or sharp Cheddar, grated
  • 4 teaspoons tarragon mustard
  1. Heat broiler and position rack within 3 inches of the top heating element.

  2. Cut a square of focaccia bread, then slice in half, lengthwise. Spread 1 teaspoon of tarragon mustard on each slice of bread, and top with grated cheese.

  3. Place open-face sandwich under broiler and heat until cheese is bubbly and warm. Remove, let cool a minute or two, and then enjoy!
