Fresh Goat's-Milk Cheese and Lavender Honey

This is another wonderful way to combine the tang of goat's milk with other flavors. The heady scent of lavender infuses the goat's-milk cheese with almost roasted earthiness and depth. Serve this to start a romantic meal, or a very special summer meal.

INGREDIENTS | SERVES 6 to 8

  • ½ pound fresh goat's-milk cheese
  • 2 tablespoons lavender honey
  • 3 sprigs of fresh lavender
  • A dozen light crackers
  1. Arrange fresh goat's-milk cheese in a small mound on a serving plate.

  2. Drizzle with lavender honey, decorate with lavender sprigs, and serve with light crackers.

Dental Floss in the Kitchen?

Keep a roll of unwaxed, unflavored dental floss in your spice cupboard for cutting goat cheese. Wrap a piece between two fingers on opposite hands, and then use it to cut a log of goat cheese into neat rounds.
