Crecenza and Lemon Olive Oil
Crecenza is a fresh, soft cheese made from cow's or sheep's milk. After minimal curd cutting, it is formed into small, flat squares that ripen within a week. The lemon olive oil makes this already bright cheese luminescent.
INGREDIENTS | SERVES 6
- 4–6 ounces fresh Crecenza cheese
- ¼ cup lemon olive oil
- 1 sweet baguette
Put Crecenza on a small serving plate or in a shallow bowl. Drizzle with olive oil and serve with sliced baguette.
Taste Your Olive Oil
Always taste your olive oil before combining it with other ingredients. Olive oil is made from freshly harvested olives and is heavily influenced by climate and geography. You want to match light cheeses with light oils, and heavy cheeses with more robust oils.
