A Basque Table Platter
If you can't find any of the three cheeses listed in this recipe, substitute with a semihard sheep's-milk cheese, a semihard goat's-milk cheese, and a sheep's-milk blue from the Basque country.

- ¾ pound Ossau Iraty
- ¾ pound Garrotxa
- ¾ pound Bleu de Basque
- ½ cup French dry-cured olives
- Rustic baguette
Bring all cheeses to room temperature.
Arrange the cheeses on a platter with the olives and sliced baguette, with a knife for each cheese.
