Warm Ricotta and Basil Dressing

Use this dressing over barbecued steak, chicken, fish, or vegetables.

INGREDIENTS | YIELDS 1 cup

  • 1 cup fresh ricotta cheese
  • 4 tablespoons mascarpone
  • 2 tablespoons milk
  • 2 tablespoons fresh basil, minced
  • 1 tablespoon pine nuts, crushed
  1. Put all ingredients in a small saucepan, and stir until combined.

  2. Heat gently over medium-low heat until warmed through, then pour immediately over steak, chicken, fish, or vegetables, and serve.

Parmigiano Rinds and Soup
