Pizza Cream Sauce
This sauce makes a wonderful base for all sorts of pizzas. It changes the balance from sweet and bright to creamy and flavorful. Have fun experimenting with this one.
INGREDIENTS | YIELDS 1 cup
- 1 teaspoon olive oil
- ¼ cup yellow onion, minced
- 2 tablespoons unsalted butter
- 2 tablespoons unbleached white flour
- ½ cup milk
- ½ cup heavy cream
- ½ teaspoon kosher salt
- ⅛ teaspoon ground white pepper
- 1 teaspoon fresh thyme, minced
In a small sauté pan, heat olive oil over low heat, then add minced onion and sauté until onions have softened and become translucent. Set aside.
Melt butter in a medium, heavy saucepan over low heat.
Slowly sprinkle in flour and stir continuously over medium heat until butter and flour form a roux. Add the milk slowly, stirring after each addition to prevent lumps from forming.
Add heavy cream, turn heat back to low, and stir frequently until the mixture has thickened. Add sautéed onions and then season with salt, pepper, and thyme.
