Parmigiano-Reggiano with Saba and Ice Cream

The perfect finish to a romantic dinner.

INGREDIENTS | SERVES 2

  • 1 pint French vanilla ice cream
  • ¼ pound Parmigiano-Reggiano cheese
  • 1–2 tablespoons Saba
  1. Divide ice cream into two bowls.

  2. Break Parmigiano-Reggiano into chunks with a sharp knife and arrange on a plate to share.

  3. Drizzle Parmigiano-Reggiano with Saba, and nibble on the cheese between spoons of ice cream.

What Is Saba?

Saba is balsamic vinegar before balsamic vinegar becomes vinegar. A rich and sweet syrup, it's commonly drizzled over Parmigiano-Reggiano, added to spaghetti sauce, and used to counter acidic foods. It can be found in specialty food stores wherever real balsamic vinegars from Italy are sold.
