Applesauce
If you have a food mill or tomato press, you can bake the apples with the skins on and extract them using the mill. Tart apples are better for this recipe.
INGREDIENTS | SERVES 4
6 large apples
Water, as needed
¼ cup sugar
¼ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
2 whole cloves
2 tablespoons butter
Core and peel the apples. Place them in a small saucepan with 1" water. Bring to a boil over medium heat and cook for 15 minutes.
Remove the apples from the water and either run them through a food mill or through a blender (using some of the water to help create a purée).
Place the apple mash, sugar, salt, and spices in a skillet over low heat. Simmer for 30 minutes, stirring occasionally.
Stir in the butter and taste. Add more sugar or spices as necessary. Serve warm or cold.
