Down-Home Classic Green Beans

This dish is great hot or warm and it can be made ahead of time and warmed later when ready to serve.

INGREDIENTS | SERVES 4-6

  • 3 slices bacon, diced
  • 1 small onion, diced
  • 1 pound fresh green beans, trimmed
  • 1 russet potato, diced
  • ½ cup chicken broth
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  1. Place a large skillet over medium heat. Once the skillet is warmed, add the bacon and the onion and cook until bacon is brown but not crispy, about 5 minutes.

  2. Add the green beans, potato, chicken broth, garlic, salt, and pepper and cook for 3–4 minutes.

  3. Reduce the heat to medium-low and cover. Cook for 5 minutes. The potatoes should be almost soft and the green beans should be bright green.

  4. Remove the lid and increase the heat to medium-high. Let the broth evaporate. Serve immediately.
