Grilled Okra

If you don't like okra, this recipe also works well with slices of eggplant or whole button mushrooms.

INGREDIENTS | SERVES 4-6

1 teaspoon kosher salt (½ teaspoon table salt)

1 teaspoon white sugar

2 teaspoons sweet paprika

1 teaspoon ground coriander

½ teaspoon ground black pepper

½ teaspoon cayenne pepper

¼ teaspoon celery seed

1 pound okra

2 tablespoons vegetable oil

  • Prepare a high-heat grill pan. Combine the salt, sugar, and spices in a small bowl.

  • Rinse the okra in cold water and trim off the stem, but don't cut into the pod. Shake dry and place into a large bowl. Drizzle the oil over the okra and toss with your hands to coat.

  • Sprinkle the spice mix over the okra, tossing so it's coated evenly. Insert skewers perpendicularly through the pods.

  • Place skewers on the grill and cook for 2–4 minutes on each side, using tongs to turn them over. Transfer to a platter and serve immediately.
