Grilled Okra
If you don't like okra, this recipe also works well with slices of eggplant or whole button mushrooms.
INGREDIENTS | SERVES 4-6
1 teaspoon kosher salt (½ teaspoon table salt)
1 teaspoon white sugar
2 teaspoons sweet paprika
1 teaspoon ground coriander
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
¼ teaspoon celery seed
1 pound okra
2 tablespoons vegetable oil
Prepare a high-heat grill pan. Combine the salt, sugar, and spices in a small bowl.
Rinse the okra in cold water and trim off the stem, but don't cut into the pod. Shake dry and place into a large bowl. Drizzle the oil over the okra and toss with your hands to coat.
Sprinkle the spice mix over the okra, tossing so it's coated evenly. Insert skewers perpendicularly through the pods.
Place skewers on the grill and cook for 2–4 minutes on each side, using tongs to turn them over. Transfer to a platter and serve immediately.
