Sloppy Joes

If you use lean ground beef and fat-free Cheddar cheese, this is a very low-fat dish. To cut calories you can omit the brown sugar.

INGREDIENTS | SERVES 4-6

1½ pounds lean ground beef

1 medium onion plus ¼ onion, chopped

2 garlic cloves, smashed

1 8-ounce can tomato paste

1 12-ounce can tomato sauce

1 red bell pepper, finely chopped

2 tablespoons Worcestershire sauce

2 tablespoons brown sugar

2 tablespoons prepared mustard

1 tablespoon cider vinegar

1 teaspoon chili powder

4–6 hamburger buns

½ cup Cheddar cheese, shredded

  • Place a large skillet over medium heat. Once it's heated, add the ground beef. Chop the ground beef with a wooden spoon or a spatula into small pieces.

  • Once the beef is cooked, drain off the fat and then put the beef in a bowl. Add 1 chopped onion and the garlic to the skillet and sauté.

  • Return the meat to the skillet and combine all of the other ingredients except for the ¼ onion, hamburger buns, and cheese. Reduce the heat to low and simmer for 20 minutes. Once the liquid has evaporated and the pepper is softened, move the meat mixture to a serving bowl. Serve with chopped onion, hamburger buns, and shredded Cheddar cheese for garnish.
