Citrus Peels (Drying)

This is a great way to use peels. In dried form, these are excellent in canning and preserving recipes as well as for baking.

INGREDIENTS | YIELD VARIES

  • citrus peels (orange, lemon, lime, tangerine, grapefruit)
  1. Shred peels; leave in a cool, dry room to dry, covered with a paper plate.

  2. Use food processor or grinder to chop peels into a good size for cooking. Put in airtight container; label and store.

Citrus

Citrus fruits come to us from Southeast Asia. The word citrus originates from the Greek kedros, which was a name the Greeks used for various aromatic trees. Most of the citrus we have today are considered hybrids, and botanists are trying to determine if some trees have been overlooked in this category. Kumquats have recently been added to the citrus family.
