Pickled Ginger Sauce
This is a wonderful Asian-style dipping sauce that can be canned or frozen. If you cannot find enough pickled ginger juice, many stores carry regular ginger juice.
1. Mix all the ingredients together in a nonaluminum pan over medium heat.
2. Let the sauce come to a low rolling boil; reduce by about ½ cup.
3. Cool and preserve. Add fresh chopped green onion when serving.

1 tablespoon dried onion flakes

½ tablespoon chives

1 teaspoon freshly ground pepper

1 ½ teaspoons pickled ginger, minced, plus 1 cup juice
