Pickled Ginger Sauce
This is a wonderful Asian-style dipping sauce that can be canned or frozen. If you cannot find enough pickled ginger juice, many stores carry regular ginger juice.
INGREDIENTS | MAKES 2 CUPS
- ½ cup rice wine vinegar
- ¼ cup fresh lime juice
- 1 tablespoon dried onion flakes
- ½ tablespoon chives
- 1 teaspoon freshly ground pepper
- 1 ½ teaspoons pickled ginger, minced, plus 1 cup juice
- 1 teaspoon dark soy sauce
Mix all the ingredients together in a nonaluminum pan over medium heat.
Let the sauce come to a low rolling boil; reduce by about ½ cup.
Cool and preserve. Add fresh chopped green onion when serving.
