Peanut Sauce

Peanut sauce tastes excellent on many items, including chicken, grilled beef, pork, noodles, rice, and even breadsticks. Add more water if you prefer a thinner consistency.

1. Sauté the shallot in peanut oil. In a saucepan, combine shallot with remaining ingredients, except lemon or lime juice.

2. Whisk over medium heat until mixture comes to a very soft boil. Taste; adjust red pepper, then add the lemon or lime a few drops at a time to balance out the flavors.

3. Cool. Pour into 2 ½-pint freezer containers or add to meat as a marinade in an appropriate airtight container; freeze. Use within 6–8 months.

  • INGREDIENTS

  • 1 medium shallot, minced

  • 1 teaspoon peanut oil

  • ¼ cup peanut butter

  • 2 teaspoons soy sauce

  • 1 teaspoon dark sesame oil

  • 1 teaspoon rice wine vinegar

  • 1 tablespoon brown sugar or honey

  • 1 tablespoon fresh lemon or lime juice

  • 1 clove garlic, crushed

  • ½ teaspoon powdered ginger

  • ½ teaspoon red chili flakes

  • ½ cup water

  • 1 tablespoon fresh lemon or lime juice
