Raspberry Reduction Marinade
Fruited meats were very popular on the finest of tables in the Middle Ages and Renaissance.
1. Gently sauté the minced onions in oil until golden brown.
2. Add the remaining ingredients to the onions; simmer.
3. Let the liquid reduce by about 1 cup; cool.
4. Move to freezer-safe containers or pour over the desired meat and freeze everything together. Use within 8 months.
