Apple Maple Sauce

This reduction is delicious on ham and pork. If you’re short on time, substitute 1 ½ cups of applesauce for the fresh apples.

INGREDIENTS | MAKES 3 CUPS

  • 4 large firm apples, diced, plus water to cover
  • 2 whole cloves
  • 1 teaspoon wine vinegar
  • 1/2 cup real maple syrup
  • 1/4 cup apple jelly
  • 2 teaspoons minced garlic
  • 1 cup chicken stock
  1. Place apples and cloves in a saucepan; cover with water.

  2. Simmer, stirring regularly until apples are soft.

  3. Put the apple mixture through a sieve.

  4. Return the applesauce to your pan and add all remaining ingredients.

  5. Bring to a rolling boil, stirring regularly. Allow liquid to reduce by 1/2 cup.

  6. Pour into sterilized jars, leaving 1/4" headspace. Wipe the rims and cap, and process for 15 minutes in a hot-water bath.
