Apple Maple Sauce
This reduction is delicious on ham and pork. If you’re short on time, substitute 1 ½ cups of applesauce for the fresh apples.
INGREDIENTS | MAKES 3 CUPS
- 4 large firm apples, diced, plus water to cover
- 2 whole cloves
- 1 teaspoon wine vinegar
- 1/2 cup real maple syrup
- 1/4 cup apple jelly
- 2 teaspoons minced garlic
- 1 cup chicken stock
Place apples and cloves in a saucepan; cover with water.
Simmer, stirring regularly until apples are soft.
Put the apple mixture through a sieve.
Return the applesauce to your pan and add all remaining ingredients.
Bring to a rolling boil, stirring regularly. Allow liquid to reduce by 1/2 cup.
Pour into sterilized jars, leaving 1/4" headspace. Wipe the rims and cap, and process for 15 minutes in a hot-water bath.
