Pomegranate Jelly (Canning)

This jelly taste good but is rich in antioxidants and vitamins A, C, and E.

INGREDIENTS | MAKES 3 ½ PINTS

  • 3½ cups pomegranate juice
  • 2 tablespoons lemon juice
  • 6 cups sugar
  • 1 3-ounce pouch liquid pectin
  1. In nonreactive pan, mix pomegranate and lemon juices, and sugar.

  2. Over medium heat, bring to full rolling boil. Stir regularly.

  3. Stir in pectin and continue to boil for 1 minute.

  4. Ladle hot jelly into hot jars, leaving ¼" headspace.

  5. Cap and process in boiling-water bath for 10 minutes.
