Maple-Apple Jam (Canning)
Just for fun, leave ½" of space at the top of the jars, sprinkling hard-crack caramel and chopped nuts on top of the jam. The tasty result is similar to a candy apple at the fair.
INGREDIENTS | MAKES 8 ½ PINTS
- 6 pounds mixed apples, chopped
- 6 cups sugar
- 1 cup maple syrup
- ½ teaspoon cinnamon
- ½ teaspoon allspice
- ½ teaspoon nutmeg
- ½ teaspoon ginger
- ¼ teaspoon cloves
Combine all ingredients in a large nonreactive pot. Bring to a boil over medium low heat.
Continue boiling, stirring frequently, until the jam holds its shape when put on a cold platter.
Pour hot into hot jars, leaving ¼" headspace. Cap and process in a hot-water bath 10 minutes.
