Maple-Apple Jam (Canning)

Just for fun, leave ½" of space at the top of the jars, sprinkling hard-crack caramel and chopped nuts on top of the jam. The tasty result is similar to a candy apple at the fair.

INGREDIENTS | MAKES 8 ½ PINTS

  • 6 pounds mixed apples, chopped
  • 6 cups sugar
  • 1 cup maple syrup
  • ½ teaspoon cinnamon
  • ½ teaspoon allspice
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ¼ teaspoon cloves
  1. Combine all ingredients in a large nonreactive pot. Bring to a boil over medium low heat.

  2. Continue boiling, stirring frequently, until the jam holds its shape when put on a cold platter.

  3. Pour hot into hot jars, leaving ¼" headspace. Cap and process in a hot-water bath 10 minutes.
