Nutty Honey Peanut Butter (Canning)
Try a little vanilla in this recipe for a nice twist. You can also change the base nut to anything you want.
INGREDIENTS | MAKES ABOUT 3 CUPS
- 2 cups roasted peanuts
- 2 tablespoons vegetable oil
- 1 cup honey
- salt to taste
Put nuts through a blender or chopper.
Add vegetable oil to 1 cup of the nuts; mix thoroughly. Add more oil if mixture is not smooth enough.
Add honey; mix thoroughly.
Add remaining nuts; mix until evenly distributed.
Pack into clean, hot canning jars, leaving 1" headspace.
Cap and process in hot-water bath 1 hour.
When you serve, mix the peanut butter. The peanut butter is best used within 6 months.
In the fifteenth century, Africans were grinding peanuts and using them as a thickener. We also know that soldiers in the Civil War ate a peanut porridge. Nonetheless, it wasn’t until the late nineteenth century that George Bayle began producing peanut butter as a healthy addition to the diet.
