Luscious Rose-Lavender Ice Cream (Freezing)

This recipe is intended for an ice cream maker.

1. Mix 11/2 cups sugar with rose petals to make a paste.

2. In a saucepan, mix cream, milk, and remaining sugar together. Bring to a simmer and stir until sugar dissolves. Remove from heat.

3 Whisk the egg yolks until fluffy. Add to the hot liquid very slowly, whisking constantly. Return to heat.

4. Stir in lavender and vanilla and continue heating until mixture reaches 180°F.

5. Pour into ice cream maker and follow manufacturer’s directions.

6. Put in freezer-safe containers and store.

  • 1 cup loosely packed rose

  • petals

  • 1 cup heavy cream

  • 1 cup whole milk

  • 5 large egg yolks

  • ½ cup lavender flowers

  • ¾ teasppon vanilla extract
