Lavender Beef Jerky (Drying)
You can make this jerky with roses, too.
INGREDIENTS | MAKES 2 POUNDS JERKY
- 4-pound beef tenderloin, sliced thin
- 2 tablespoons extra-virgin
- olive oil
- 2 tablespoons white vinegar
- 1 cup beef stock
- 2 tablespoons whole black peppercorns
- 1 ½ teaspoons dried thyme
- 2 tablespoons dried culinary
- lavender flowers
- 2 tablespoons honey
Place all ingredients in a pan; warm.
When lavender becomes aromatic, remove from heat, about 3– 5 minutes. Cool.
Pour everything into a food-storage bag; marinate in refrigerator 48 hours. Shake regularly.
Put slices in dehydrator, following manufacturer’s instructions. Store in an airtight container when dried.
