Lavender Beef Jerky (Drying)

You can make this jerky with roses, too.

INGREDIENTS | MAKES 2 POUNDS JERKY

  • 4-pound beef tenderloin, sliced thin
  • 2 tablespoons extra-virgin
  • olive oil
  • 2 tablespoons white vinegar
  • 1 cup beef stock
  • 2 tablespoons whole black peppercorns
  • 1 ½ teaspoons dried thyme
  • 2 tablespoons dried culinary
  • lavender flowers
  • 2 tablespoons honey
  1. Place all ingredients in a pan; warm.

  2. When lavender becomes aromatic, remove from heat, about 3– 5 minutes. Cool.

  3. Pour everything into a food-storage bag; marinate in refrigerator 48 hours. Shake regularly.

  4. Put slices in dehydrator, following manufacturer’s instructions. Store in an airtight container when dried.
