Mustard Greens and Lemon Sauté
Pungent mustard greens nourish lung function. These health-promoting greens are another example of vegetables from the cruciferous family. They have also been shown to protect against rheumatoid arthritis, cancer, memory loss, osteoporosis, and cardiovascular disorders.
INGREDIENTS | SERVES 4
1 bunch mustard greens, chopped
2 teaspoons sesame oil
2 tablespoons spring water
Fresh lemon juice, to taste
¼ cup walnuts, toasted and chopped
In a skillet, sauté greens in oil for 2 minutes. Add water. Bring to boil, lower heat, and simmer, covered, 2 minutes.
Season with lemon juice; garnish with walnuts.
