Curried Cauliflower
Cauliflower is mild and nutty and adapts well to almost any spice or herb. Roasted with curry, it becomes tender and spicy. Cauliflower is another cruciferous vegetable, and provides cancer-fighting benefits.
INGREDIENTS | SERVES 4
1 cauliflower, cut into florets
1 onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon butter
2–3 teaspoons curry powder
¼ teaspoon salt
⅛ teaspoon white pepper
1 tablespoon apple cider vinegar
Preheat oven to 400°F.
Place cauliflower, onion, and garlic in roasting pan and toss to mix.
In a small saucepan, combine remaining ingredients; heat over low heat until butter melts.
Drizzle butter mixture over vegetables and toss to coat. Roast for 25–35 minutes or until cauliflower is tender when pierced with a knife. Serve immediately.
