Vanilla Flax Granola

Making your own granola allows you to create whatever flavors you desire. Crystallized ginger, chopped dates, a sprinkle of cinnamon, coconut flakes, dried papaya — the possibilities are endless!

INGREDIENTS | YIELDS 2½ CUPS

⅔ cup maple syrup

⅓ cup canola oil

1½ teaspoons vanilla

2 cups oats

½ cup ground flax seeds or wheat germ

¾ cup dried fruit, diced small

  • Preheat oven to 325°F.

  • Over low heat, melt and whisk together syrup, canola oil, and vanilla until margarine is melted.

  • On large baking tray in a single layer, toss together oats, flax seeds, and dried fruit. Drizzle maple syrup mixture over oats, gently tossing to combine as needed.

  • Bake for 25–30 minutes, carefully tossing once during cooking. Granola will harden as it cools.
