Diabetic Lemon Cake
Substituting diet soda for eggs and oil saves calories but lets the sweet flavor and tender texture shine right through. Add a splash of lemon juice to some sugar-free whipped topping to frost your fully cooled cake.

- 1 18.25-ounce box lemon cake mix
- 1 12-ounce can lemon-lime diet carbonated soft drink
Preheat oven to 350°F. Grease and flour cake pan. Set aside.
Combine cake and soft drink to create a smooth batter.
Turn batter into the cake pan. Bake according to cake mix instructions.
