Diabetic Carrot Cake
While cakes can be made lower in sugars, they are not usually lower in carbohydrates. Enjoy them in moderation, taking special care to avoid cake recipes that contain fruit juice, which quickly raises blood sugar.

- 1 18.25-ounce box spice cake mix
- 1 12-ounce can diet lemon-lime soft drink
- ½ cup shredded carrots
- ½ cup raisins
- ½ cup nuts, chopped
Preheat oven to 350°F. Grease and flour cake pan. Set aside.
Combine cake mix and diet soda, using electric mixer to blend completely.
Fold in carrots, raisins, and nuts.
Bake according to cake mix instructions. Allow cake to cool.
