Chocolate Cake from DIY Mix

INGREDIENTS | SERVES 8–12
- 4 cups Basic DIY Cake Mix
- 1 cup plus 2 tablespoons skim milk, divided
- 2 teaspoons vanilla
- ¼ cup unsalted butter, softened
- 3 eggs
- 2 squares unsweetened chocolate, melted
- 3 tablespoons cocoa powder
Preheat oven to 350°F. Grease and flour cake pans. Set aside.
Pour cake mix into a large bowl. Make a well in the center. Add 1 cup skim milk, vanilla, and butter. Beat for 3 minutes or until a smooth batter forms.
Add remaining 2 tablespoons skim milk, melted chocolate, and cocoa powder. Beat using an electric mixer until batter and chocolate are fully incorporated.
Add eggs and thoroughly combine. Pour batter into cake pans.
Bake for 35 minutes or until the center of the cake springs back when lightly touched.
