Basic DIY Cake Mix

Want to enjoy the convenience of baking with a mix but need to keep an eye out for allergens and other problematic ingredients? Make your own cake mix. This mix will keep three weeks in the refrigerator and three months in the freezer.

INGREDIENTS | MAKES 12 CUPS

  • 7 ½ cups sifted flour
  • 1 tablespoon salt
  • 4 ½ cups sugar
  • 4 tablespoons double-acting baking powder
  • ¾ cup unsalted butter
  1. Combine all ingredients except butter in a large mixing bowl and mix well.

  2. Cut butter into fine pats and run through a food processor with 2 ½ cups of the flour mixture. Stop when the mixture is quite fine.

  3. Combine processed mixture with remaining flour mixture. Mix thoroughly. Place 4 cups mixture in each of 3 resealable plastic bags for future use.

  4. Label and refrigerate or freeze mixture until ready to use.
