Sweetest Hushpuppies

Serve these round treats at your next fish fry for a sweeter savory crunch. Dip in tartar sauce or ketchup or sprinkle with malt vinegar for an extra burst of flavor.

INGREDIENTS | MAKES 24 HUSHPUPPIES

  • 1 9-ounce package cornbread mix
  • 1 9-ounce package yellow cake mix
  • 2 eggs
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 large onion, finely chopped
  • ¼ cup milk
  • Oil for frying
  1. Combine all ingredients except milk and oil. Mix to form a crumbly mixture. Add milk and stir to form a batter.

  2. Drop by teaspoons into 1 inch hot oil in a 12″ skillet.

  3. Cook until golden on both sides. Remove from oil and let drain on paper towels. Serve warm.
