Sweet Potato Casserole
This dish is delicious enough for the Thanksgiving table but easy enough for an average Thursday night. This easy-to-make recipe brings wholesome goodness to the table.
INGREDIENTS | SERVES 6
- 3 cups mashed sweet potatoes
- 3 cups granulated sugar
- 1 cup butter
- 2 eggs
- 1 teaspoon vanilla
- ⅓ cup milk
- 1 cup sweetened shredded coconut
- 1 cup brown sugar
- 1 cup white cake mix
- 1 cup pecans
Preheat oven to 350°F.
Mix sweet potatoes, sugar, ½ cup melted butter, eggs, vanilla, milk, and coconut in a large mixing bowl with a wooden spoon. Pour into a buttered baking dish.
In a smaller mixing bowl, mix brown sugar, cake mix, and pecans.
Sprinkle dry mixture over potatoes. Dot evenly with remaining butter. Bake for 25 minutes.
