Breakfast Bake Casserole

This sweet and savory morning treat is easy to make as long as there's a steaming cup of coffee at your side.

INGREDIENTS | SERVES 6

  • 2 cups yellow cake mix, divided
  • 8 slices bacon, cooked
  • 1 4-ounce can sliced mushrooms, drained
  • 2 green onions, thinly sliced
  • 1 ½ cups shredded mild Cheddar cheese
  • 4 eggs
  • 2 cups whole milk
  • ½ cup butter
  1. Sprinkle 1 cup cake mix in the bottom of a well-buttered 8″ square baking dish.

  2. Top with bacon, mushrooms, onions, and cheese. Sprinkle with remaining cake mix.

  3. In a medium bowl, whisk together eggs and milk. Pour over layered ingredients. Refrigerate at least 1 hour, preferably overnight.

  4. Dot with butter and bake, uncovered, for 1 hour or until center is set.
