Tropical Angel Muffins
This light, elegant citrus recipe is great on a summer day or with a cup of hot coffee. Add a side of sweet yogurt.
INGREDIENTS | MAKES 24 MUFFINS
- 1 16-ounce box fat-free angel food cake mix
- 1 14-ounce can crushed pineapple with juice
- 1 10-ounce can mandarin oranges, drained
- Zest of 1 orange
Preheat oven to 350°F. Coat muffin pans with nonstick spray. Set aside.
Combine cake mix, pineapple and juice, and mandarin oranges. Mix well. Gently mix in orange zest.
Fill each muffin cup ½ full. Bake for 15 minutes.
Remove muffins from pan and cool on a rack.
If possible, choose organic citrus fruits for recipes that require zest. Some conventional citrus growers use waxes or pesticides that become concentrated in the rinds. Organic options may mean many fewer toxins and a fresher, cleaner taste.
