Toasty Blueberry Loaf

This really is the best thing since sliced bread! It's great for a group or for traveling. Simply bake, wrap in foil, and you're good to go!

INGREDIENTS | SERVES 12

  • 2 large eggs
  • 1 cup sour cream
  • 1 21-ounce can blueberry pie filling
  • 1 18.25-ounce box white cake mix
  • Sugar for dusting
  1. Preheat oven to 350°F. Grease loaf pans and set aside.

  2. Mix eggs, sour cream, and blueberry pie filling in a bowl with a wooden spoon. Gently fold in cake mix. Do not overmix. Fill loaf pans halfway with batter.

  3. Sprinkle with sugar to taste. Bake for 25 minutes. Cool in pan. When cool enough to touch, remove from pan. Slice and serve.
