Lemon Poppyseed Muffins
Lemon Poppyseed Muffins are a coffeehouse favorite that are easy to make at home. Adding a few extra ingredients to lemon cake mix makes for some sweet sailing.
INGREDIENTS | MAKES 24 MUFFINS
- 1 18.25-ounce box lemon cake mix
- 2 tablespoons flour
- 3 eggs
- ⅔ cup milk
- ⅓ cup vegetable oil
- 1 teaspoon baking powder
- 2 tablespoons poppy seeds
Preheat oven to 375°F. Grease muffin tin or line with paper cups. Set aside.
Mix all ingredients in a large mixing bowl using an electric mixer set to medium speed.
Fill muffin cups ½ full. Bake for 20 minutes or until tops are golden.
Serve warm.
