Healthier Brownie Muffins
This recipe is a secret weapon for the health-minded baker. It's a chocolaty way to sneak some fiber into your day.
INGREDIENTS | MAKES 24 MUFFINS
- 3 cups bran cereal
- 2 ¼ cups water
- 1 package low-fat brownie mix
- 1 ½ teaspoons baking powder
Preheat oven to 350°F. Line muffin tin with paper baking cups.
In a small bowl, soak cereal in the water for 5 minutes. Then, in a separate and larger bowl, mix soaked cereal, brownie mix, and baking powder till a moist batter forms.
Fill up each cupcake cup to the brim. Bake for 25 minutes. Serve with butter.
