Pumpkin Bread

Whether the pumpkin is from the patch or from a can, it adds wholesome nutrition and sweet, moist flavor to a cake.

INGREDIENTS | SERVES 8

  • 1 18.25-ounce box yellow cake mix
  • 2 cups Baking Pumpkin
  • ½ cup organic molasses
  • 4 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup chopped pecans (optional)
  • ⅓ cup dried cranberries or raisins
  1. Preheat oven to 350°F. Grease two 9 ½″ loaf pans.

  2. Combine all ingredients in a large mixing bowl and mix well with an electric mixer set to medium speed.

  3. Divide mixture evenly between the pans and bake for 1 hour.

  4. Allow to cool before turning out of pans.

Buying Pumpkin

Look for pie pumpkins or other small pumpkins with thicker walls when you're choosing one for baking. Most jack-o'-lantern pumpkins are bred for other uses. Do not bake your jack-o'-lantern if it is more than one day old; it may not be safe.
