Organic Carrot Cake

This wholesome, organic, less-sweet treat is a great choice for families looking to beat the sugar blues.

INGREDIENTS | SERVES 12

  • 1 18.25-ounce box organic carrot cake mix
  • 1 cup organic carrots, grated
  • ¼ cup organic applesauce
  • ½ cup purified water
  1. Preheat oven to 350°F. Butter a round 9″ cake pan.

  2. Scrub carrots with a vegetable brush but do not peel.

  3. Mix cake mix, grated carrots, applesauce, and water in a large mixing bowl. Combine contents gently with a wooden mixing spoon until batter is moist.

  4. Bake for 45 minutes.

Icing a Carrot Cake

Traditionally, carrot cakes are iced with sour cream frosting, but it's also lovely with a simple glaze. Use a fork to mix 4 tablespoons organic butter with ½ cup organic confectioners' sugar and 2 teaspoons organic vanilla extract. You'll have the cool sweetness of the icing without oversweetening the cake.
