Farmers' Market Trifle

Have an overabundance of fresh fruit? What a wonderful dilemma! This recipe is one of many creative ways you'll find to celebrate and enjoy the taste of summer.

INGREDIENTS | SERVES 6–8

  • 1 18.25-ounce box organic angel food cake mix plus ingredients called for on box
  • ½ cup organic milk
  • ½ cup organic vanilla yogurt
  • 1 3.9-ounce box organic instant pudding mix
  • 4 cups peaches or other juicy fresh fruit
  • Fresh whipped cream
  1. Prepare and bake angel food cake according to cake mix instructions.

  2. As cake bakes, combine milk, yogurt, and pudding mix in a large bowl using an electric mixer set to high speed. Let stand 10 minutes.

  3. When cake is baked and cooled, cut into bite-sized cubes.

  4. Place a layer of cake cubes in the bottom of a large glass bowl, follow with a layer of fresh fruit, and top with milk mixture. Repeat until bowl is nearly full.

  5. Top with whipped cream. Keep cool until ready to serve.

There's much more to storing fruit than stashing it in the fridge. Most fruits will turn grainy and wilt if they get much cooler than 30°F. Citrus fruit has an even lower tolerance level for cold temperatures. Many fruits will do just fine — and even continue to ripen — outside the fridge. If you're just waiting a day or two to eat them, consider displaying fruit in a bowl in the kitchen.
