Easy Rhubarb Upside-Down Cake
This recipe is from Leah Jewison, president of the Mankato Area Growers Association. She knows beautiful rhubarb when she sees it.
INGREDIENTS | SERVES 8
- 1 cup brown sugar
- 3 cups rhubarb, chopped
- 1 18.25-ounce box yellow cake mix plus ingredients called for on box
Preheat oven according to cake mix instructions. Butter a 9″ × 13″ cake pan.
Sprinkle brown sugar across the bottom of the pan. Layer chopped rhubarb on top of brown sugar.
Prepare batter according to cake mix instructions. Pour over rhubarb.
Bake according to instructions. Allow cake to cool, then invert onto serving platter.
