A Is for Apple Cake

INGREDIENTS | SERVES 8

  • ½ cup chopped walnuts
  • 1 18.25-ounce box spice cake mix
  • 1 3.9-ounce box butterscotch instant pudding mix
  • 4 eggs
  • ½ cup vegetable oil
  • ½ cup cold water
  • 3 medium fresh organic apples, cored, peeled, and chopped
  • 1 cup dried cranberries
  • Confectioners' sugar for garnish
  1. Preheat oven to 325°F. Butter a tube pan and sprinkle the bottom with chopped walnuts.

  2. Combine cake mix, pudding, eggs, oil, and water in a large mixing bowl using an electric mixer set to medium speed.

  3. Gently fold in apples and dried cranberries so they are distributed evenly throughout the batter. Pour into pan and bake for 55 minutes.

  4. Invert cake onto wire rack to cool. Sprinkle with confectioners' sugar.
