Minute Macaroons
These are great for the holidays and any other time hungry friends gather together. They are very portable, so keep this recipe top of mind when planning for potlucks.
INGREDIENTS | MAKES 20 MACAROONS
- 1 18-ounce box vanilla cake mix
- ⅓ cup butter
- 2 tablespoons room-temperature water
- 1 teaspoon vanilla extract
- 1 egg, slightly beaten
- 1 ½ cups sweetened flaked coconut
- ½ cup dark chocolate chips
Preheat oven to 350°F. Lightly butter a 13″ × 9″ pan and set aside.
Pour cake mix into a large bowl. Crumble butter into mix until fully incorporated. Stir in water. Mix in vanilla.
Add egg and gently fold in coconut. Turn into cake pan.
Bake for 18 minutes. Let cool for 20 minutes.
Melt chocolate chips in a warm double boiler or small saucepan. Drizzle over top of cookies.
Chill for 2 hours. Cut into bars.
