Sandwich Cookie Cake

This cake can't be dunked in a glass of milk, but it's just as tasty as your favorite sandwich cookies. The creamy filling is the sweet note that makes this cake a special event in and of itself.

INGREDIENTS | SERVES 12

  • 1 18.25-ounce box devil's food cake mix
  • 1 3.9-ounce box instant chocolate pudding
  • 1 cup vegetable oil
  • 1 cup sour cream
  • 4 eggs
  • ½ cup skim milk
  • 2 teaspoons vanilla extract
  • 2 cups mini semisweet chocolate chips
  • Sandwich Cookie Cake Frosting
  1. Preheat oven to 350°F. Grease and flour cake pans. Set aside.

  2. In a large mixing bowl, combine all ingredients except chocolate chips and frosting, mixing with an electric mixer on medium until batter is entirely smooth.

  3. Fold in chocolate chips. Turn batter into two round cake pans. Bake for 45 minutes or until a toothpick comes out clean.

  4. As cake bakes, mix one batch of Sandwich Cookie Cake Frosting.

  5. Remove cake from oven and allow to cool before turning one layer onto the serving platter. Spread the top of this first layer with a generous helping of frosting.

  6. Invert the second layer on top of the frosting, creating a sandwich. Use the rest of the frosting to cover the cake.
