Chess Cake Squares

This recipe makes a slightly more solid “bar” than the cake recipe. Easy to cut and serve, it's a great choice for potlucks and other events as it travels very well.

INGREDIENTS | SERVES 12

  • 1 18.25-ounce box yellow or butter cake mix
  • ½ cup butter
  • 4 eggs, divided use
  • ½ cup white sugar
  • 1 8-ounce package cream cheese, softened
  1. Preheat oven to 350°F. Grease and flour a 9″ × 13″ pan. Set aside.

  2. In a large bowl, mix cake mix, butter, and 1 egg until a shortbread-like mixture forms. Pat mixture into the bottom of the pan.

  3. In a separate bowl, combine sugar, remaining eggs, and softened cream cheese. Layer on top of crust.

  4. Bake for 40 minutes or until slightly browned.

  5. Allow to cool in the pan before scoring into bars.
