All-American Apple Pie Cupcakes

Plan a trip to an orchard or the farmers' market and make a double batch of your own pie filling. Use half for a pie and half for these cupcakes.

INGREDIENTS | SERVES 24

  • 1 18.25-ounce box yellow cake mix
  • ¼ cup water
  • 1 egg
  • 2 tablespoons prepared pumpkin pie spice mix
  • 1 15-ounce can apple pie filling
  • 1 12-ounce tub cream cheese frosting
  1. Preheat oven to 350°F. Line a muffin tin with paper baking cups.

  2. Mix cake mix, water, egg, and spice mix with an electric mixer until a smooth batter forms. Fold in pie filling.

  3. Fill baking cups halfway. Bake for 23 minutes.

  4. Allow cupcakes to cool on a rack before frosting.
