All-American Apple Pie Cupcakes
Plan a trip to an orchard or the farmers' market and make a double batch of your own pie filling. Use half for a pie and half for these cupcakes.
INGREDIENTS | SERVES 24
- 1 18.25-ounce box yellow cake mix
- ¼ cup water
- 1 egg
- 2 tablespoons prepared pumpkin pie spice mix
- 1 15-ounce can apple pie filling
- 1 12-ounce tub cream cheese frosting
Preheat oven to 350°F. Line a muffin tin with paper baking cups.
Mix cake mix, water, egg, and spice mix with an electric mixer until a smooth batter forms. Fold in pie filling.
Fill baking cups halfway. Bake for 23 minutes.
Allow cupcakes to cool on a rack before frosting.
