Easy Protein Cookies
Tofu is a great source of protein, and this is an easy way to sneak a little into the kids' diet. These cookies are so easy to make that they'll quickly become a go-to favorite.
INGREDIENTS | SERVES 24
- 1 18.25-ounce box cake mix
- ½ cup silken tofu
- ¼ cup olive oil
- 1 egg
Preheat oven to 350°F.
Mix all ingredients well in a large mixing bowl.
Drop by spoonfuls onto a nonstick cookie sheet. Bake for 20 minutes.
Allow to cool and remove to wire rack.
