Easy Protein Cookies

Tofu is a great source of protein, and this is an easy way to sneak a little into the kids' diet. These cookies are so easy to make that they'll quickly become a go-to favorite.

INGREDIENTS | SERVES 24

  • 1 18.25-ounce box cake mix
  • ½ cup silken tofu
  • ¼ cup olive oil
  • 1 egg
  1. Preheat oven to 350°F.

  2. Mix all ingredients well in a large mixing bowl.

  3. Drop by spoonfuls onto a nonstick cookie sheet. Bake for 20 minutes.

  4. Allow to cool and remove to wire rack.
