Summer on the Patio Cake
This fruity sheet cake is perfect for a crowd. Get creative with toppings. Peaches, strawberries, and blueberries make beautiful choices.
INGREDIENTS | SERVES 12
- 1 18.25-ounce box white cake mix plus ingredients called for on box
- 1 8-ounce box cream cheese
- 1 cup confectioners' sugar
- 1 teaspoon vanilla
- 1 15-ounce tub nondairy whipped topping
- Seasonal fruit
Prepare and bake cake according to cake mix instructions. Let cake cool completely.
Mix cream cheese, confectioners' sugar, vanilla, and nondairy whipped topping completely. Spread on cooled cake. Arrange fresh fruit on top of topping.
Cover and keep cool until ready to serve.
Fruit looks luscious when you slice it but can wilt and become brown shortly thereafter. To keep it looking plump, fresh, and juicy, consider tossing the cut fruit with a squeeze of fresh lemon juice or a dash of a fruit-preserving product. Either of these will help.
