Old Fashioned Sugar Cookies

Sugar cookies have a flaky texture that is achieved by cutting the butter into the cake mix.

  • 1 18.25-ounce white cake mix
  • ¾ cup butter
  • 2 egg whites
  • 2 tablespoons light cream
  1. Place cake mix in large bowl. Using a pastry blender or two forks, cut in butter until particles are fine.

  2. Blend in egg whites and cream until mixed. Shape dough into a ball and cover.

  3. Chill for at least two hours and as many as 8 hours in refrigerator. Then preheat oven to 375°F.

  4. Roll dough into 1″ balls and place on ungreased cookie sheets. Flatten to ¼″ thickness with bottom of glass.

  5. Bake for 7–10 minutes or until cookie edges are light brown. Cool on cookie sheets for 2 minutes, then remove to wire racks to cool completely. Serve as is or frost as desired.

Easy Variations

Use different flavors of cake mix to make different types of sugar cookies, but use the butter, egg whites, and cream for a flaky texture. These can be frosted or glazed, or sprinkle them with colored sugar before baking for a festive touch.
